We use dried egg whites which are made by removing the water from liquid egg whites and spray drying them into a powder. In compliance with the law, the egg whites are all pasteurized and inspected by the USDA. This means they are safe to consume.
The temperature used for heat pasteurization is lower than the temperature to cook an egg and therefore the proteins would not be denatured. Individuals with sensitivities or allergies to uncooked eggs should consult their health care provider.
